It has became one of the most favorite appetizers in our family over the years. Light chicken liver pate is a great delicacy to serve and surprise your guests.

The preparation is very quick following my easy chicken liver pate recipe. It takes a little patience before you start making your chicken liver pate. It is important to rinse the chicken livers thoroughly in cold water and let them to soak in Port wine for half an hour at least.

This is a very light variation of chicken liver pate. Whipped cream, incorporated gently into it, makes the liver pate consistency fluffy, smooth and mousse like.

Once your chicken liver pate is ready, it needs to be chilled. You can store your chicken liver pate in large bowl or divide it in between a small ramekins to make an individual servings. Cover with a plastic foil and let the chicken liver pate rest in the fridge for at least one hour before serving. Chicken liver pate can be made two days ahead and kept chilled and covered.

To serve, spread a chicken liver pate over the butter waffles or a crunchy ciabatta bread. Arrange on the serving plates and decorate with a canned cranberries. The combination of chicken liver pate and cranberries is delicious! Serve with a small garden salad if you prefer.

  1. Prepare your fresh ingredients.
  2. Rinse chicken livers wit cold water thoroughly.
  3. In a small bowl combine chicken livers and Port wine.
  4. Let chicken livers to soak for 30 minutes.
  5. Drain livers.
  6. In the large skillet melt 2 tablespoons butter over medium heat.
  7. Add shallot and cook about 5 minutes, stirring occasionally.
  8. Add chicken livers, bay leaf and freshly ground black pepper.
  9. Reduce the heat and cook, stirring occasionally until livers are brown outside but slightly pink in center, about 5-8 minutes.
  10. Remove from heat and let cool for 15 minutes.
  11. In the large bowl whip cream into stiff peaks.
  12. Transfer the chicken liver to the large bowl, add a sea salt and puree with a hand blender until smooth.
  13. Add cream and gently fold to combine.
  14. Cover and place in the fridge for one hour at least.
  15. In the large bowl combine olive oil and apple vinegar.
  16. Add mixed green leaves and toss to combine well.
  17. Enjoy your chicken liver pate with canned cranberries or small green salad.

How to Make Chicken Burritos – Red Beans Included

Making burritos is simple and the most of people enjoy burritos as a quick to prepare lunch or dinner. I usually make my burritos using a chicken breasts, cut into chunks. The most favorite combination to make a burrito filling in our family is a chicken with red beans.

I don’t make the chicken burritos too much spicy usually. Adding a cayenne red pepper makes the burritos spicy enough. Those who prefer to enjoy eating a very spicy burritos, can add the hot tomato salsa on the top of filling before wrapping up the burritos.

I like to prepare the chicken for burritos in advance. It makes chicken tasting even more delicious, once it has enough time to absorb all the spices. I combine the chicken with all the spices in the large bowl. Always use the larger bowl than the one you thought you’d need. :) I put the chicken into the fridge to let it rest for at least one hour. Also you can prepare your chicken a day before.

The rest of preparing your chicken burritos is very quick and easy. It is not necessary to overcook the chicken. I usually cook it for 5 – 7 minutes until cooked through, stirring constantly. The chicken will start to produce quite enough juices. I wait until the juices reduce slightly, before adding the red beans finally. I combine chicken with red beans, stirring for additional 1-2 minutes. Then I remove my burrito filling from the heat.

Heat your wheat tortillas slightly and arrange the chicken and red beans filling in the middle of each of them. Wrap the tortillas tightly to make burritos and serve immediately.

  1. Prepare all your fresh ingredients.

  11. Top with your favorite tomato salsa, mild or hot, if you prefer.
  12. Wrap the tortilla tightly.

Quick and Easy Chicken Breast Recipe – Lemon Makes It Refreshing

There are so many variations of cooking a chicken breasts on the stove! Every time I need to cook a tasty dinner and I don’t want to spend too much time in the kitchen, I follow this quick and easy chicken breast recipe.

What I like about cooking a chicken breasts, is that it never takes a long time to prepare them.  In this simple, but a  delicious dish, I combine a fresh chicken breasts with quite a large amount of white onions and green olives. Adding the ingredients one by one while cooking a chicken breasts slowly, allowes the chicken to absorp the different tastes gradually. A taste of fresh lemon adds a special refreshing touch to your dish finally.

What makes a chicken breasts tasting special following this recipe,  is using a little saffron, which adds a significant colour to the chicken also.

There is no need to make an additional side dish to serve your chicken breasts with olives and lemon. I’ve tried to serve a simple cooked brown rice. It was a great combination! Also the brown rice is a very healthy side dish, rich in minerals and vitamins.

For the best result, it is good to soak the brown rice in the cold water for half an hour before you start to cook. Soaking in the water helps the rice to soften better.

Follow the simple steps to cook the brown rice:

  1. Soak the brown rice in the cold water for an hour and half.
  2. In the pot heat 1 tbsp extra virgin olive oil over medium heat.
  3. Rinse the brown rice in water.
  4. Add 1 cup of brown rice to the pot.
  5. Cover the brown rice with 2 and 1/2 cups cold water.
  6. Season with a little sea salt.
  7. Wait until it starts to boil.
  8. Lower the heat.
  9. Cook 30 minutes over a very low heat.
  10. Serve and enjoy.

How To Make Bolognese Sauce – Delicious Spaghetti Dinner

If you love the freshly cooked sauce full of great tasting meat, served on the top your favorite pasta, you will like the idea of making your homemade bolognese sauce to share with your family tonight.

Following the traditional recipe, the bolognese sauce should be cooked using a ground beef. I cook my own variation of the sauce. I use a ground veal meat to cook the bolognese sauce. As a result of using a veal meat, the sauce is tasting much smoother.

I always use a freshly ground veal, instead of the ready to use, packaged in the food store one.  I cook the ground veal with a pureed plum tomatoes. In the summer, juicy, ripe tomatoes can substitute for the tomato puree. Peel and cut roughly the fresh tomatoes before adding them to the ground meat.

Simmering slowly, adding the ingredients gradually,  one by one and seasoning slightly, is the secret of making your perfect, fresh and aromatic bolognese sauce.

Serve your bolognese sauce on the top of your favorite pasta. For me, the combination of bolognese sauce and freshly cooked spaghetti or spaghettini /the thinner ones/, sprinkled with a freshly grated parmesan cheese makes dinner perfect anytime.

  3. In the large sauce pan heat the olive oil over medium heat until hot but not smoking.
  4. Add ground veal, one bay leaf and cook for a while, stirring constantly until the veal separates into the small pieces.
  5. Lower the heat and cook the veal for 5 more minutes.
  6. Puree the plum tomatoes using the electric blender.
  7. Add the tomato puree to the veal, season with salt, add crushed garlic and the sauce simmer for about 15 minutes until the excess juices evaporate and the sauce thickens.
  8. Meanwhile cook your spaghetti in the pot of boiling, salted water until al dente.
  9. Remove the sauce from the heat and season with freshly ground black pepper.
  10. Drain the spaghetti through the colander with a large holes.
  11. Arrange spaghetti on the serving plate and top with the bolognese sauce.
  12. Sprinkle with a freshly grated parmesan cheese and serve immediately.

If you would like to enjoy a light, well balanced dish at dinner, prepare yourself a simple oven baked salmon with juicy vegetables. The combination of baked salmon fillets and fresh vegetables makes the dish delicious.

Talking about vegetables to combine with a salmon, there are many more options definitely. I found the best a mix of a cherry tomatoes, spring onions and red chilli pepper to use in this recipe. The chilli pepper adds a slight spicy touch to your dish.

I don’t like overcooked vegetables as a result of baking process. Especially cherry tomatoes tend to be ready very soon. The salmon fillets need a little more time to be done perfectly. I start with baking a salmon first and I add vegetables later. I bake my vegetables for 10 minutes. But if you don’t like the skin from cherry tomatoes being peeled away too easily, bake them a little shorter, about 4-5 minutes.

Serve your oven baked salmon fillets immediately. There is no additional side dish needed to enjoy your dinner. But if you feel like having something small with your baked salmon fillets, try a simply cooked sweet potato. In this case, start making your dinner with cooking the sweet potato in the pot of boiling water. To cook a large sweet potato until soft takes about 45 minutes. Peel the cooked sweet potato, cut into the circles and share with the rest of your family. :)

Fish baked with vegetables in foil makes a perfectly  balanced dish. If you prefer eating white fish and light dishes, low in calories, you would try to prepare your fish in foil definitely. The fish and vegetables will produce a lot of juices during baking. As a result of baking process, you will enjoy a delicate piece of fish.:)

Fish fillets baked in the oven, packaged in the foil is very easy to make. Each portion of the dish consists of a small amounts of different ingredients, so it is good to get them ready in advance, separated in the small bowls. It makes it easier to take one of them at a time and divide in between the fish fillets.

I bake my fish fillets in the aluminium foil. To prevent  the fish from getting in touch with the aluminium foil. I place a baking paper sheet on the foil first, then I arrange the fish fillets on the top. One fillet per each piece of foil covered with baking paper.

I usually bake a sea bass fillet in the foil with the vegetables. But I have tried to bake a halibut or a cod fillets this way also. All of them tasted delicious! It is important if you can yourself  a fresh, boneless and skinless white fish fillets.

  1. Preheat the oven to 400F/200C.
  2. Cook potatoes with skin for about 25 minutes. Let cool.
  3. Prepare all the ingredients, separately arranged in the bowls.
  4. Rinse cherry tomatoes with cold water and into halves.
  5. Cut peeled potatoes into circles.
  6. Prepare 4 pieces of aluminium foil, large enough to place the fillets and vegetables, leaving enough space all around to fold the edges over.
  7. Place a sheet of baking paper on each piece of foil.
  8. Divide fish fillets in between all the pieces of foil.
  9. Season each fillet with salt and freshly ground black pepper.
  10. Divide potato circles, anchovies, green olives, capers, cherry tomatoes and basil leaves in between the fish fillets.
  11. Pour a nice splash of extra virgin olive oil over each fillet.
  12. Create a nice packages by putting together the opposite sides of foil, folding over the edges finally.
  13. Put in the oven for 35 minutes.
  14. Let your fish fillet packages rest about 15 minutes before serving.
  15. Divide packages in between serving plates.
  16. Open the foil carefully and enjoy your healthy dinner. :)

I am going to share with you one of the simplest recipes of cooking boneless chicken breasts. It is a very healthy dish, combining low in fat and high in proteins chicken with a green peas. With a very few ingredients you can make this great tasting dish quick and easy.

I usually prepare this chicken breasts recipe when I have a very little to cooking a dinner. Either preparation time or cooking time is very short and cooking instructions are very easy to follow. It is a very light dish for those who prefer not using too much spices.

For the best result, it is good to use a fresh chicken breasts, instead of frozen. The meat will stay tender, full of juices, which we all appreciate while enjoying our dinner.

Saffron couscous makes a great and simple to prepare side dish to serve with your cooked boneless chicken breasts.

Follow a couple of simple steps to make a perfect saffron couscous.

 

  • In a medium sauce pan combine 1 tbsp olive oil, 1 and 1/2 cups vegetable stock and coarsely crumled saffron threads.
  • Bring to a boil.
  • Stir in 1 cup couscous.
  • Cover and remove from heat.
  • Let it rest 10 minutes.
  • Fluff with fork.
  • Serve immediately.

Cooking Salmon on the Stove – Salmon Cubes with Broccoli

Salmon fillets or a whole salmon is prepared on the grill or in the oven mostly. But there are many different variations of cooking salmon on the stove also. If you are looking for a simple way  of preparing a salmon fillets on the stove top, accompanied with a healthy vegetables, I have one simple recipe to share with you now.

The best is to use a skinless salmon fillets to prepare this dish, to cut them into cubes  and cook until cooked through, but slightly pink in the center.

All in one pan, this tasty and colourful dish can make a perfect dinner to share with your whole family. I like when broccoli keeps its fresh green colour, when served. I try to not overcook broccoli and I cook it over the steam usually. For this recipe I like to divide broccoli crowns into a small florets instead of cutting them into the thin pieces. Broccoli florets make a nice bite sized pieces and they look great on the serving plate also.

Serve your salmon cubes cooked on the stove immediately. If you fill like a little side dish would be nice to enjoy with your salmon dinner, serve with a simply cooked rice or a brown rice.

  2. Separate broccoli crowns into small florets.
  3. Cook broccoli in the steamer 3-5 minutes.
  4. Crush pine nuts if using.
  5. Cut salmon fillets into 1 inch cubes.
  6. In a large skillet heat 1 tbsp olive oil over medium-high heat.
  7. Add salmon and cook turning once halfway through, until cooked through, but slightly pink in the center. It takes 3-5 minutes usually.
  8. Remove skillet from the heat.
  9. With a slotted spoon transfer salmon to a plate and season with salt and pepper.
  10. Return skillet to the heat and add remaining olive oil.
  11. Add garlic, chilli peppers and pine nuts if using and combine.
  12. Add broccoli florets and combine well.
  13. Finally add salmon cubes into the skillet.
  14. Serve immediately.

Oven Baked Salmon Fillets – Stuffed with Smoked Salmon

IMG_3038There are many varietes of preparing a salmon fillets in the oven. I am going to share with you the best oven baked salmon fillets recipe I have ever prepared. I stuff salmon fillets with a smoked salmon, the one, ready to use, you serve as a snack with a piece of fresh bread or a crunchy baguette, usually.

To prepare your salmon fillets ready to stuffing you need to butterfly it firstly, which simply means to cut each salmon fillet through to open it like a book. Using a sharp knife start cutting a salmon fillet through, from the right side to the left.  Moving a knife slowly through the fillet it will start to open easily. There is nothing complicated about butterflying your salmon fillet at all. :) Once the salmon fillet is opened, arrange a small smoked salmon pieces over a one half of each salmon fillet, then fold over to enclose filling.

This dish tastes great when served on its own. A little baby greens or a rocket salad with balsamic vinegar can be a great companion for your baked salmon fillets.

I usually serve baked salmon with a homemade lemon mayonnaise.

  • Into the mixing bowl add 1 egg yolk and 1 tsp mustard.
  • Whisk with an electric mixer, then start adding a vegetable oil by drops.
  • When all the ingredients combine together well, forming a smooth consistency, start pouring in more oil slowly, until you have used up the rest of oil /about 1 cup/.
  • Season with a pinch of salt, ground black pepper/optional/ and finally pour in a lemon juice from a half of small lemon and combine.
  • Lemon juice will make your mayonnaise lighter and smoother. Simply delicious!

Lemon mayonnaise adds a refreshing touch to your oven baked salmon fillets.

Easy Fried Chicken Breast – Coated with Cornflakes

IMG_3011Everybody loves these crunchy chicken pieces. Especially those homemade. You can prepare chicken breasts in a variety of ways, baked in the oven including. I used to use a classical recipe for a long time, preparing fried chicken breasts coating them firstly with a flour, then beaten eggs and finally with a layer of a finely crushed bread crumbs. It was very tasty also.

Lately I have discovered how to make easy fried chicken breast, coating it  with a layer of  crushed cornflakes. The result is juicy chicken with a crispy crust. Also your fried chicken breast shouldn’t be greasy. I remove fried chicken breast from a frying pan to a bowl nestled with a paper towel, which absorbs all the excess oils easily.

I usually season chicken breast with a little sea salt only. Sometimes I season it with a little of freshly ground black pepper. But there are many options how to improve the taste of your fried chicken breast, if you prefer it more spicy. In this case combine your favorite spices with the crushed cornflakes before you start coating it.

To serve, I recommend a homemade mashed potatoes and a little garden salad. My favorite side dish is a fresh cucumber salad with vinegar.

How to make a simple cucumber salad with vinegar

  • Peel one medium cucumber
  • Using a food processor cut the cucumber
  • Remove the cucumber into the large salad bowl
  • Cut 1 spring onion and combine with cucumber
  • In the smal bowl combine 1 cup water, 1 tbsp brown sugar, 2 tbsp apple vinegar and 4 tbsp extra virgin olive oil
  • Season the cucumber with sea salt and freshly ground black pepper
  • Pour your vinegar over the cucumber and your salad is ready to serve
  • Place your cucumber salad into the fridge if serving later

  3. With the help of a rolling pin, press chicken breasts tightly to make them flat.
  4. Season with sea salt.
  5. In a couple of additions crush cornflakes using a food processor.
  6. Transfer cornflakes into the bowl.
  7. In the separate bowl beat the eggs.
  8. Dip chicken breasts in the egg, then coat with cornflakes thoroughly.
  9. In a large frying pan heat vegetable oil over medium - high heat.
  10. Arrange the chicken pieces in a single layer.
  11. Fry until nice golden brown, turning once, about 5 minutes each side.
  12. Remove to a bowl nestled with a paper towel.
  13. Transfer to a serving platter and serve immediately!
