Green Thai Chicken Curry Recipe

Popular in Thailand, this dish can be made at home easily. It is called green for its typical colour coming from green paste, which is what we basically start to make our green thai chicken curry with. If you make your homemade green paste, don’t be surprised by its heat intensity. It is very hot indeed. Much hotter than this one ready to use you can buy in the supermarket. If you don’t want your chicken curry to be spicy too much, be careful about the amount of green paste you start to make your green chicken curry with.

When I wanted to make my chicken curry milder, I was not starting to cook it with a green paste at all. But I have picked up a couple of basic green paste ingredients, a crushed clove of garlic, chopped shallot, grated knob of ginger and two whole green chilli peppers. I combined them in the pan with a groundnut oil over medium heat. I followed the rest of the original thai green chicken recipe as usual. My chicken curry cooked this way was spicy enough and tasting delicious.

What I like about cooking this exotic dish, is a combination of the tender chicken and refreshing vegetables, all in one pan. On the top of that, the coconut milk adds a special touch to the dish and makes it really creamy. Simply delicious!

Simmering slowly in the coconut milk, makes chicken really tender. I add vegetables later, after cooking the chicken for a while, trying to not overcook them.

 

To make a homemade green curry paste you will need:

 

3 large green chillies, deseeded, chopped
4 cloves of garlic, sliced
3 shallots, chopped
2 tsp ground coriander
knob of ginger, about 2 cm, peeled, chopped
2 tbsp coriander leaves, chopped
1 tsp sea salt
lemongrass stalks, chopped/optional/
2 tbsp groundnut oil

 

Combine all the green curry paste ingredients  in  the jar of an electric blender. Blend together until smooth.

It is the best to serve your green chicken curry with steamed basmati rice.

Instructions
  1. Prepare all the fresh ingredients.
  2. Cut chicken into the nice bite-sized pieces, season with sea salt.
  3. Heat a pan with 2 tbsp of groundnut oil over medium heat.
  4. Add a green curry paste and stir-fry for 2-3 minutes.
  5. Add chicken and cook until the meat changes its colour into light brown, about 5 minutes.
  6. Pour a coconut milk over the chicken, reduce a heat and let it simmer for 15 minutes.
  7. Add garlic, zucchini, carrot and mushrooms gradually and let your chicken curry simmer for 15 minutes more.
  8. Finally add freshly chopped coriander leaves.
  9. Serve immediately with basmati rice and enjoy.
Basmati Rice
  1. Heat olive oil in the pan over medium heat.
  2. Rinse basmati rice in the bowl of hot water. Pour water away and repeat two times more.
  3. Add rice into the pan, cover with water, season with salt.
  4. Cover and cook over a very low heat 12 minutes.
  5. Serve basmati rice with your green chicken curry dinner and enjoy.

Baked Whole Chicken Recipe – Spicy and Juicy

I was quite surprised by the result of following this baked whole chicken recipe. It is very easy to follow and preparation time is short. But the result is incredibly juicy and aromatic chicken. The baked chicken by following my recipe should be quite spicy, so everybody who loves  spicy dishes will satisfy its taste buds by eating it definitely. :)

There is one specialty about preparing this baked chicken. It has to be cut out along the chicken’s backbone and then spread out flat in the roasting pan, left in one piece, as you can see on the picture above. There is nothing complicated about  cutting out the chicken’s backbone. Simply get yourself a long and sharp kitchen knife and lay your chicken breasts side down on a cutting board. Move your knife slowly along the chicken’s backbone and the chicken will start to open easily. Transfer your chicken to the roasting pan and press on it to flatten. Simple as that! :)

I use the cast iron round roasting pan with the deep  ridges on the bottom to bake this chicken. During the baking, the chicken produces quite a lot of juices, so the ridges on the bottom of the roasting pan help the juices to flow away easily.

Serving your baked chicken with a couple of pieces of crunchy ciabatta and a little fresh green salad would be perfect. Reserve an aromatic chicken juices to pour over the chicken before serving. I found it tasty to combine a juicy baked chicken and a green salad with a dressing made with a heavy cream.

 

Here’s my tip on how to make a simple green leaf salad with a creamy dressing.

  • Rinse green salad leafs with cold water.
  • Dry and cut salad leafs with ceramic knife into desired size.
  • Arrange salad in the large salad bowl.
  • Pour 1 cup heavy cream into the smaller bowl.
  • Add juice from 1/2 of lemon and 2 tbsp icing sugar.
  • Combine well.
  • Pour the cream dressing over your green salad.
  • Serve immediately or store in the fridge.

  1. Prepare all your ingredients.
  2. Preheat oven to 400F/200C.
  3. In the bowl combine olive oil, lemon juice, sea salt, garlic and red chilli pepers.
  4. Lay your chicken breasts side down on the cutting board.
  5. Slowly cut out the chicken along the backbone to open it completely. Press on it to flatten.
  6. Transfer the chicken to the roasting pan, breast side down.
  7. Spread the olive oil mixture all over the chicken.
  8. Turn over the chicken and press on it a little to flatten. Wings should partly cover the breasts.
  9. Spread the rest of your olive oil mixture over the chicken's surface.
  10. Put the roasting pan with chicken into the oven and bake 80 minutes.
  11. Enjoy your juicy chicken dinner immediately!

Cooking Salmon on the Stove – Salmon Cubes with Broccoli

Salmon fillets or a whole salmon is prepared on the grill or in the oven mostly. But there are many different variations of cooking salmon on the stove also. If you are looking for a simple way  of preparing a salmon fillets on the stove top, accompanied with a healthy vegetables, I have one simple recipe to share with you now.

The best is to use a skinless salmon fillets to prepare this dish, to cut them into cubes  and cook until cooked through, but slightly pink in the center.

All in one pan, this tasty and colourful dish can make a perfect dinner to share with your whole family. I like when broccoli keeps its fresh green colour, when served. I try to not overcook broccoli and I cook it over the steam usually. For this recipe I like to divide broccoli crowns into a small florets instead of cutting them into the thin pieces. Broccoli florets make a nice bite sized pieces and they look great on the serving plate also.

Serve your salmon cubes cooked on the stove immediately. If you fill like a little side dish would be nice to enjoy with your salmon dinner, serve with a simply cooked rice or a brown rice.

  1. Cut broccoli stems from crowns.
  2. Separate broccoli crowns into small florets.
  3. Cook broccoli in the steamer 3-5 minutes.
  4. Crush pine nuts if using.
  5. Cut salmon fillets into 1 inch cubes.
  6. In a large skillet heat 1 tbsp olive oil over medium-high heat.
  7. Add salmon and cook turning once halfway through, until cooked through, but slightly pink in the center. It takes 3-5 minutes usually.
  8. Remove skillet from the heat.
  9. With a slotted spoon transfer salmon to a plate and season with salt and pepper.
  10. Return skillet to the heat and add remaining olive oil.
  11. Add garlic, chilli peppers and pine nuts if using and combine.
  12. Add broccoli florets and combine well.
  13. Finally add salmon cubes into the skillet.
  14. Serve immediately.

Simple Chicken Curry Recipe – Creamy and Delicious

  2. Cut chicken breasts into 1 inch thick cubes.
  3. In the large baking dish combine heavy cream with garlic, curry powder and cayenne powder.
  4. Add chicken breast cubes into the mixture.
  5. Cover and bake in the preheated oven 60 minutes.
  6. Prepare basmati rice meanwhile.
  7. Remove baking dish from the oven and let your chicken curry rest for 15 minutes before serving.
  8. Serve and enjoy your dinner!
