I would like to share with you my favorite recipe how to make a chicken curry. In my recipe I combine a plenty of fresh vegetables with chicken. You can make this curry using vegetables only, if you like vegetarian meals. I prefer to make a curry with chicken.

I always use a fresh chicken breasts instead of frozen. The fresh chicken tends to be much more juicy and tender. In my  chicken curry recipe I use quite a lot spices to make my chicken curry. The mixture of all the spices in combination with a coconut milk, makes the chicken curry incredibly aromatic and tasty. Either using of fresh curry leaves or a ground indian curry powder is great to add a special touch to your chicken curry.

You can make your chicken curry in the strength of your choice. In this recipe I use the whole green chilli peppers. I don’t deseed them, so my chicken curry is quite spicy in the result. And the best chicken curry should be spicy! If you prefer a milder taste, just cut your green chilli peppers lenghtwise and deseed them.

I also add potatoes and sweet potatoes to the chicken curry. Sweet potatoes add a slightly sweet taste to the chicken curry and help to balance the acidity of the tomatoes, I use to cook in the chicken curry  also. Adding the potatoes to the chicken curry helps to thicken the sauce at the end of cooking. So don’t worry if you feel like your chicken curry sauce is not thick enough.

You can substitute the fresh tomatoes for a tin of peeled plum tomatoes, if you don’t have any at the moment. I cook a chicken slowly until tender, in the smooth sauce of tomatoes and coconut milk. I don’t like to overcook the vegetables and potatoes.. I add them gradually during the cooking, because each kind of vegetables deserves a different time of cooking.

The side dish is really not necessary to serve with your chicken curry. Just in case you would prefer having a light side dish, the fluffy basmati rice is great to serve with.

Chicken Curry
  1. Prepare all the fresh ingredients.
  2. Cut chicken breasts into the bite sized pieces.
  1. Season chicken breasts wit sea salt.
  2. In the large frying pan heat olive oil over medium heat.
  3. Add onion, whole green chilli peppers and a curry powder.
  4. Mix well to combine.
  5. Cook for about 5 minute until onion gets soft, stirring occasionally.
  6. Add chicken and combine.
  7. Cook until chicken turns brown, stirring occasionally.
  8. Add either fresh tomatoes or tomato puree.
  9. Add coconut milk.
  10. Lower the heat and let the curry simmer slowly for 30 minutes.
  11. Add potatoes, sweet potatoes and zucchini.
  12. Combine well and let it simmer for 10 minutes.
  13. Add green peas and beans and let the chicken curry simmer for the last 5 minutes.
  14. Remove from the heat.
  15. Serve your chicken curry immediately and enjoy.
Basmati Rice
  1. Rinse basmati rice with hot water a couple of times.
  2. In the pot heat olive oil over medium heat until hot but not smoking.
  3. Add basmati rice and water.
  4. Season with salt and cover.
  5. Cook 12 minutes over a very low heat.
  6. Remove from the heat and fluff with a fork.
  7. Serve with your chicken curry and enjoy your dinner.

How to Make Chicken Burritos – Red Beans Included

Making burritos is simple and the most of people enjoy burritos as a quick to prepare lunch or dinner. I usually make my burritos using a chicken breasts, cut into chunks. The most favorite combination to make a burrito filling in our family is a chicken with red beans.

I don’t make the chicken burritos too much spicy usually. Adding a cayenne red pepper makes the burritos spicy enough. Those who prefer to enjoy eating a very spicy burritos, can add the hot tomato salsa on the top of filling before wrapping up the burritos.

I like to prepare the chicken for burritos in advance. It makes chicken tasting even more delicious, once it has enough time to absorb all the spices. I combine the chicken with all the spices in the large bowl. Always use the larger bowl than the one you thought you’d need. :) I put the chicken into the fridge to let it rest for at least one hour. Also you can prepare your chicken a day before.

The rest of preparing your chicken burritos is very quick and easy. It is not necessary to overcook the chicken. I usually cook it for 5 – 7 minutes until cooked through, stirring constantly. The chicken will start to produce quite enough juices. I wait until the juices reduce slightly, before adding the red beans finally. I combine chicken with red beans, stirring for additional 1-2 minutes. Then I remove my burrito filling from the heat.

Heat your wheat tortillas slightly and arrange the chicken and red beans filling in the middle of each of them. Wrap the tortillas tightly to make burritos and serve immediately.

  1. Prepare all your fresh ingredients.
  2. Cut chicken breasts into chunks.
  3. In the large bowl combine and mix well chicken with garlic, cumin, cayenne pepper, sea salt,freshly ground black pepper, olive oil and lime juice.
  4. Let it rest in the fridge for one hour at least.
  5. Heat the large frying pan over medium heat. It takes about 5 minutes.
  6. Add chicken into the pan and cook about 5-7 minutes, stirring constantly, until chicken is cooked through and the excess juices reduce partially.
  7. Add red beans to the chicken and stir until well combined and heated.
  8. Remove from the heat.
  9. Heat the wheat tortillas in the microwave oven.
  10. Arrange the chicken in the middle of each tortilla.
  11. Top with your favorite tomato salsa, mild or hot, if you prefer.
  12. Wrap the tortilla tightly.
  13. Serve your chicken burritos immediately and enjoy.

Easy Chicken Taco Recipe – Fresh and Healthy

I like making this simple dish anytime. What I like about tacos the most, is that it looks nice, colourfully, it is  low in fats, so healthy. Also, I like that I can make easy chicken tacos for dinner, but also anytime to make a healthy snack.

If you have enough time, prepare your chicken meat combined with spices in advance a let it rest in the fridge for one hour at least. This will help chicken to absorb all the spices and taste better once cooked.

I also make it easy with serving my tacos. I arrange all the ingredients in the separate bowls. Then I place a warm chicken, tortillas and cream next to the served vegetables. I make so called “tacos bar”. It not only looks great nad fresh, full of different colours, but everybody can help yourself to create their tacos and bring it to the table on the serving plate and enjoy with others.

There are many variantions of what to fill your tacos with. I am sharing my favorite and simple combination of chicken, green salad, spring onions and homemade tomato salsa, topped with a dollop of  a sour cream.

Tomato salsa made from fresh tomatoes, cannot miss on the homemade chicken tacos. I used to make it from a cherry tomatoes and habanero peppers. But be careful. Habanero makes your salsa quite hot. You don’t have to use it all, start with a little chopped habanero, taste for intensity, add more chopped habanero peppers if needed. If you prefer making a milder tomato salsa, use jalapeno peppers. :)

 

Prepare your fresh tomato salsa. This will add a special touch to your chicken tacos.

 

  • Dice about 12 cherry tomatoes
  • Dice 1 shallot
  • Chop 1 habanero pepper
  • Toss all the ingredients together well
  • Add 2 tbsp extra virgin olive oil
  • Add juice from 1/2 of lime
  • Season with a pinch of sea salt and freshly ground black pepper/optional/
  • Mix to combine

  3. Add cumin, black pepper, sea salt, juice from 1/2 half of lime, olive oil and combine.
  4. Let chicken rest in the fridge.
  5. Cut spring onions and arrange in a little serving bowl.
  6. Cut little gemini salad leaves crosswise and arrange in the little serving bowl.
  7. Prepare fresh tomato salsa.
  8. Heat a large frying pan on medium heat until hot. It takes about 5 minutes.
  9. Cook chicken until it changes its colour to light brown and the most of juices evaporate.
  10. Heat your tortillas on the serving plate for couple of seconds.
  11. Create your tacos by making a layers of chicken, veggies, tomato salsa, topped with a dollop of sour cream.
  12. Serve warm and enjoy!
